It started with a quote.
In 1996, two restaurateurs took a single Forrest Gump monologue — you know the one — and turned it into a shrimp shack on Monterey's Cannery Row. They figured if Bubba could rattle off twenty-one ways to cook a shrimp, the world could probably eat them. Our shrimp mascot, Louie, has been riding the badge ever since.
Turns out the world could. Bubba Gump Shrimp Co.™ became the first (and only) casual restaurant chain born from a movie property — and grew to 38 locations across the US, Mexico, Asia, the UK and Europe.
The bayou meets Moreton Bay.
We'd been eyeing Australia for years. Then, in early 2026, the chance came up to take over a beautiful space at 94 Rainbow Street.
We figured we owed the locals more than a cut-and-paste of the US menu. So we kept Bubba's recipes — the jambalaya, the shrimp boil, the coconut shrimp — and let the bay write the rest. (And yes, we call them shrimp. Bubba insisted.)
The point hasn't changed.
We don't think dinner needs to be quiet. Or fancy. Or short. We think it should sound like laughing kids and clinking schooners and someone pretending they don't want another shrimp tail when they obviously do.
That's what Bubba would've wanted. Probably. We're guessing.
Three things we won't cut corners on.
Local catch
All the seafood on our menu is Australian — shrimp, barra, calamari, the lot. We source from Queensland waters wherever we can, and we'll always tell you where your catch came from. Just ask.
Family first
Kids welcome. Strollers welcome. Birthdays, footy teams, after-school dessert runs — bring 'em all.
Have fun
If you leave smiling, we did the job. If you leave wearing a Bubba's hat, we did it well.
